This vegan keto pho has 10.5g of net carbs per serving. Absolutely healthy and delicious.You can alternate the garnish and veggies options depending on your taste.

  1. 1. Turn the heater to medium and heat the spices in half of the olive oil: anise, cloves, minced ginger, cinnamon, coriander, and cardamom in a large pot until fragrant.
  2. 2. Pour in the veggie stock (or water) and halved onion and wait until simmer.
  3. 3. Slightly lower the heat, cover with a lid and let the soup cook until the broth is fully infused with all the spices' fragrances (around 30 minutes).
  4. 4. Meanwhile, take care of the protein. Saute the mushrooms on medium in the rest of the olive oil in a preheated pan for five minutes or so. Once it's turned golden, set it aside for later.
  5. 5. Rinse the shirataki noodles carefully, drain it, and set it aside.
  6. 6. Once your broth has simmered enough discard the larger pieces of spices and onion.
  7. 7. Stir in tamari and rice vinegar. And let it simmer for another 2-3 minutes.
  8. 8. Add shredded bok choy and sauteed mushrooms in, stir well and cook a bit more, for another 3-5 minutes.
  9. 9. Once it's done - serve your soup immediately. Top up each bowl with garnishes - herbs, chilies, salt. And squeeze approximately a quarter of lime into each serving. Enjoy!
